As my
previous post was all about becoming vegetarian and healthy eating I thought it
would be nice to share with you a recipe for one of my favourite salads that I’ve
been making a lot recently. It’s quite a simple salad but its packed full of
flavour and colour, it tastes absolutely delicious and it’s healthy! (And I
could eat bowls of it!) (But I probably shouldn’t!) I love that this salad is
light and has lots of different textures. The fresh, juicy tomatoes mixed with
the warm crunchy potatoes and the creamy coleslaw, it’s truly satisfying.
For this dish you will need the following ingredients -
- Romaine Lettuce
- Baby Spinach Leaves
- Cherry Vine Tomatoes
- Red Potatoes
- Deli Style Cheese Coleslaw
- Extra Virgin Olive Oil
- Salt + Pepper
- Coriander
- Paprika Powder
This
dish will work with any type of salad vegetables/potatoes and you don’t have to
get the coleslaw with cheese (But this particular pot of slaw is my favourite
and I really recommend that you try it!) You can also use coconut oil instead
of Extra Virgin Olive Oil if you prefer, they both contain healthy fats and are
both good for digestion!
The first thing I do is boil some water in a pan and slice up the potatoes into rounds. I only tend to use 1 or 2 large-ish potatoes depending on how many people I'm cooking for. I don't slice them too thin as they will boil too quickly and break up when it comes to frying them.
I then leave them to boil on a low heat for about 5 minutes. While the potatoes are boiling I chop up the lettuce, put it in a big bowl and mix in the baby spinach leaves. I then chop up the tomatoes and leave them to one side for adding in later.
Next I heat up the oil in a large frying pan on a low heat, then once the potatoes are almost boiled, I drain the water off then lay them flat into the frying pan. This is where I add the salt, pepper, coriander and paprika seasoning. I like using paprika as it adds a bit of warmth to the potatoes.
Then I turn the potato slices over and add some more seasoning. I try to keep the pan on a low heat so it doesn't burn them. I continue to turn the potatoes over until they look golden brown and have a nice crisp texture. I then drain off the excess oil onto a paper towel and then I mix them in with my bowl of leaves.
Once I've added the potatoes, I dollop on lots and lots of cheesy coleslaw. The one I get is from Waitrose and its only a couple of pounds but you get a huuuuge pot and its usually on offer for 2 pots for £4 (Which is good for Waitrose if you ask me.) You can just use ordinary coleslaw if you wish and then add a sprinkling of parmesan cheese over the top, but its quicker and creates less washing up if its already in the coleslaw.
Finally I add the chopped tomatoes and give it one last mix before I can gobble it all up. Sometimes at the end I like to mix in some fresh onion and a squeeze of lemon to give it that extra zing. But you can add any dressing or herbs you like!
